Ingredients

  • Quinoa, rinsed1/2 cup
  • Almond milk (or other plant milk)1 1/2 cups
  • Water1/2 cup, or more as needed
  • Apple, peeled, cored and chopped1 small
  • Cinnamon1/4 tsp
  • Cardamom powder (optional)1/8–1/4 tsp
  • Sliced almondsabout 2 tbsp
  • Maple syrup or honey (optional)1 tsp
  • Saltpinch

Method

    Rinse the quinoa thoroughly under cold water.

    In a medium saucepan combine quinoa, almond milk, water and a pinch of salt. Bring to a gentle boil.

    Reduce heat to low, cover and simmer 12–15 minutes until the quinoa is tender and most liquid is absorbed. Stir occasionally.

    Meanwhile, lightly steam or simmer the chopped apple with a splash of water until soft (5–7 minutes).

    Stir cinnamon (and cardamom if using) into the cooked quinoa. Add the steamed apple pieces and warm through for 1–2 minutes.

    Serve in bowls topped with sliced almonds and a drizzle of maple syrup or honey if desired.

Ayurvedic rationale

Traditionally used to balance Pitta and gently ground Vata with its sweet, cooling and nourishing qualities. Quinoa is light and non-heating. Combined with the sweet, grounding qualities of cooked apple and a small amount of almonds, this porridge is classically used to soothe Pitta while still offering enough substance for Vata. Cooked fruit is preferred over raw in the morning for easier digestion.

Nutritionally, this provides complete plant protein from quinoa, fibre from apple, and healthy fats from almonds for steady morning energy. Contains nuts — omit the almonds or substitute pumpkin or sunflower seeds for a nut-free version. Honey is not suitable for children under one year.
