Roasted Cauliflower & Chickpea Bowl with Cumin-Lime

Ingredients

  • Cauliflower, cut into florets1 medium head
  • Cooked chickpeas1 1/2 cups
  • Olive or sesame oil1–2 tbsp
  • Cumin seeds or ground cumin1 tsp
  • Turmeric1/2 tsp
  • Ground coriander (optional)1/2 tsp
  • Black pepper1/4 tsp
  • Saltto taste
  • Lime, juiced1
  • Fresh cilantro or parsley, choppedhandful
  • Optional base: cooked quinoa or barley1/2–3/4 cup

Method

    Preheat the oven to 200–220°C (400–425°F). Line a baking sheet with parchment.

    Toss cauliflower florets and chickpeas with oil, cumin, turmeric, coriander, black pepper and salt until evenly coated.

    Spread in a single layer on the baking sheet. Roast 25–30 minutes, stirring once halfway, until the cauliflower is golden with crisp edges and the chickpeas are lightly browned.

    Remove from the oven. Squeeze fresh lime juice over the vegetables and toss.

    Serve warm, optionally over a small portion of quinoa or barley, and finish with chopped cilantro or parsley.

Chickpeas share those qualities while providing sustained energy. Warming spices kindle agni and temper the gas-forming tendency of cruciferous vegetables and legumes. High-heat roasting creates the dry, crisp texture classically preferred for Kapha; lime adds a light sour note that stimulates without excess heat.
